hello friends!
so i have heard this over and over again and i am always to lazy to make it happen. so are you ready for this?
FOOD PREP
that’s right ladies and gents. food prep. last week i was a terrible example of good eating habits and i was nevcr home to cook anything. i did make it a point to grab healthy on the go food but it’s never the same. so this week i made a list, hit the grocery store, and prepped food! i washed all my veggies and fruits, sliced, and placed in a clear container in the fridge so i don’t forget about them! i also grilled up some chicken for quick prep and next week i plan to be even better and roast some veggies and squash! now let me tell you that at 6:30 this morning when i needed to throw together lunch for the day, i literally spent 6 minutes throwing it all together and it was delish! a huge bowl of raw spinach, brussel sprouts, zucchini, strawberries, and grilled chicken topped with EVOO and balsamic vinegar! not only did it taste great, but it felt great to be eating clean plant based foods!
so i am excited to get more creative each week with prepping for different kinds of meals. i also made it a goal to cook more for carson and keep meals easy for him. i feel terrible when he eats oreos (yes i am sad to say those are in my cupboard and very tempting) for dinner. so up for this evening is another round of clean eating enchiladas and i will happily share a few of my favs with you!

October 17, 2012 at 5:46 amGood for you! Luckily I am a stay at home mom so I eat all my lunches at home and prep for dinner early in the day BUT I can’t stress this enough to my clients. It is soooooo important if you want healthy and yummy food.
