who knew…a recipe or two for your morning

who knew i loved eggs so much! with starting crossfit they reccomend a paleo diet which is mostly meats,veggies, fruits, and nuts and seeds.  no grains what so ever! now i am not saying i am going 100% paleo, i think it will be fun to limit my grains and see how it goes.  so instead of oatmeal in the morning i have fallen back in love with eggs.  mmmmm.

i love eggs and i think carson wants to kill me everytime i buy the expensive hormone free eggs verssus the who knows what eggs that are $1.99.  i then tell him he gets his nasty (fake) kraft mac’n cheese so i get my eggs:)

i can thank a friend for being such a good cook and inspiring me to be a better one.  we recently spent a fun weekend with her and her man and she made us delicious meals! remember cute ash for the show? well thank her for good food if you ever see her:)

so i decided i love breakfast as much as i love eggs so why not combine them every morning in a different way?  i’m sure many of you are thinking “duh, i eat eggs everyday why are you so late to the love eggs train” but i had a good relationship with my oatmeal for a while so this is new:)

SPINACH, FETA & VEGGIE EGG SCRAMBLE

(1 Serving)

INGREDIENTS:

  • 1 tbl extra virgin olive oil
  • handful of spinach
  • 1/3 red pepper chopped
  • chopped zucchini
  • handful of muschrooms (if you like them)
  • 3 eggs (you can do 1 egg with 2 egg whites or 3 whole eggs)
  • dash of salt and pepper
  • garlic and herb feta cheese
INSTRUCTIONS: pour olive oil onto a warm frying pan.  added spinach and remaining veggies.  saute till spinach is cooked.  while veggies are cooking, add eggs to a bowl and whip in salt and pepper.  pour eggs over veggies in the pan and scramble.  sprinkle feta onto egg and veggie mixture and continue to scramble.  enjoy! 
DIPPY EGG OPEN FACE VEGGIE ON TOAST   
(serves 2) not exactly paleo with the toast:)
INGREDIENTS:
  • 2 eggs
  • 2 pieces of toast (whole wheat, sourdough, ezekial…what eva you fancy)
  • hummus
  • 1/2 tomoato sliced
  • 1/2 avocado sliced 
INSTRUCTIONS: cook eggs sunny side up ( i like to call them dippy eggs cuz you gotta dip the toast!) toast you bread and spread hummus on it.  place sliced tomato and avocado on bread followed by the dippy egg.  there ya have it! eat with a fork or try to take a huge bite out of it!  
so that’s atleast 2 ways other than the usual scramble and dippy eggs.  i hear quiche is quite tasty as well so i will have to try that too! are you an egg fan? leave me a comment with your fav way to eat eggs!

      – This is so funny, I eat hard boiled eggs every once in awhlie on my salads. But Kelsey LOVES eggs and I have been meaning to make her hard boiled to see if she likes them. I never seem to get it just right. I will write this down and hopefully be as lucky as you to make the perfect hard boiled egg! Thanks!

    I love eggs, especially dippy eggs! I’m thinking that you’ve inspired my dinner tonight…Dippy Egg over Ezekiel toast & veggies. YUM!
