spoonful of balsamic pan seared brussel sprouts

well hello!

i hope that everyone enjoyed their holiday break.  technically i am still on one and since carson is out of school it is so nice to have him around more! hoorah! Christmas was fantastic this year as i was actually living in town and we got to spend time with both families which always works out nicely! mr james surprised me with a brand new macbook air (its so light i am afraid of snapping it!) and i am in heaven playing around with my new toy:)

he out did me this year for sure but i think every girl deserves to be spoiled right? We had a fabulous little holiday!

i think that gap needs to feature my nephews because this is pretty dang adorable right? i sure hope that the cute baby gene has been passed my way for when the time comes along! i think that Christmas was even better celebrating with all the littles because it is so magical for them! we did the usual traditions and even started some new ones:) it was a fabulous holiday season if you ask me:)

along with Christmas, comes all the goodies and boy let me tell you that those goodies sure don’t sit well with me.  i have never wanted more to get back on track than i did this year.  i felt like i had the flu after a couple of days of goodies.  so once back home snug in our provo apartment, i decided to use up the bag of brussels sprouts i had lying in our fridge and created something so tasty! i was actually surprised it worked! so here it is for all of you!




  • about 25 Brussels sprouts
  • 1 tbl coconut oil
  • 4 cloves of garlic, mashed
  • balsamic vinegar
  • dash of onion powder


wash brussel sprouts and peel off discolored outer leaf.  cut of the bottom (there is probably a correct term for this, but its’ almost like a stem that is too tough to eat) and slice in half.  1 cut should suffice unless you would like smaller pieces.  heat coconut oil in a warm pan.  add garlic cloves and cook till they begin to brown.  place as many sprouts that will fit into the pan face down.  drizzle vinegar into the pan as well as a dash of onion powder (depending on how much you love balsamic vinegar, the amount will vary) and cook until they begin to soften.  use a spatula and flip sprouts.  continue cooking till desired softness.

i paired my sprouts with some grilled chicken and sprinkled some dried cranberries amongst my sprouts.  like i said, i was pleasantly surprised at how well it tasted and how easy it was!

    First, let me say that I love your hair color.

    I was just telling my husband about your new mac and that I would be scared to break it also. I was surprised this Christmas with a iPad mini.

    Your nephews are super cute. My grandson made this holiday so special for us.

    Thanks for the recipe. I will try this one soon. I’ve never had brussels sprouts but it’s on my food bucket list to try.

    I’m using my MAC BOOK AIR right now! I seriously LOVE IT! It’s amazing to travel with because it’s the weight of like a magazine… Okay, no more like a book, but STILL! I can just “throw” it in my backpack and be on my way, lol! If you plan on making videos or anything that takes up a lot of memory though, I’d suggest you get an external hard drive! 🙂

    PS: Those B-Sprouts – UH… YUM! I have some leftovers from XMAS (LOL)… I think I might just douse them in COCONUT OIL and shove them in my face, lol.
