Packing, Food and more Packing …

Happy sunday everyone!

I hope you all had a relaxing and family filled Sunday! Today was a pretty chill day here at the James house:) I did want to share a yummy dinner and dessert idea!

Tonight I made myself a Socca Pizza.  What is Socca you ask?? Well I found Socca on one of my all time favorite blogs Pure2Raw.  I love their site! So many awesome recipes and such an inspiration! Take a look around their site, they have a ton of Socca recipes! I am still working on my recipe page so for now ill just post them on the blog!

Socca Pizza
1/2 C garbanzo bean flour
1/2 C water
dash of salt
coconut oil (for the pan)

Mix the flour, water, and salt in a small bowl.  Melt the oil in the frying pan.  Pour the mix and flip when one side is golden brown (kinda like a pancake) There are so many ways to cook Socca.  You can use a dehydrator, the oven, or a frying pan. Once the socca is cooked place it on a plate and add the toppings:)

Pizza Toppings
1 large spoonful of Hummus
Handful of Spinach
Various Vegetables

I didn’t have much in the fridge so you could use anything really…I wish I had some nutritional yeast or vegan cheese but I didn’t have any on hand so i did it without!

Now for dessert…

Carob Blueberry Ice Cream (sugar free, dairy free, vegan, and raw) I used this recipe from High on Health and fell in love with it.  The original recipe called for avocado (which i didn’t have) so I just made some slight changes to make my own version:)

1 frozen Banana
1 C of frozen berries (blueberries, raspberries, and blackberries)
1 1/2 C Water
3 tbl Carob Powder
Handful of Spinach Leaves
1 tsp of Vanilla Extract
1 dash of powdered Stevia (recipe calls for 40 drops of liquid stevia but I didn’t have it)

Mix in a blender until smooth. Place in ice cream maker and wait:) If you don’t have an ice cream maker you can add a tray of ice cubes to the recipe and place it in the freezer to let it set up for about an hour:)
