Tofu for breakfast??

Hey friends!

So I finally caught up on some sleep last night from the busy weekend! Thank goodness because my body definitely needed it. It is so important to listen to your body and give it time to recover before pushing it to hard.  I rolled out of bed and decided to try something new for breakfast (mainly because I really needed to grocery shop and didn’t have the usual on hand) so… I made a tofu scrambled burrito!

Tofu Breakfast Burrito
1/3 pkg of firm tofu (drained and pressed firmly with paper towels to absorb water)
Coconut oil
Garlic Powder
Sliced yellow onion
Chopped veggies (I had some green peppers and some zucchinis on hand) You could use any you want!
Ezekiel Tortilla
Sliced Avocado (since I was the only one eating I used about 1/4 of the Avocado and saved the rest for later)
Handful of Spinach

Preparation

Heat up a non stick skillet and cover the base with coconut oil.  Once the pan is heated, tear up the tofu into small bite size pieces and cook still golden.  Use a spatula to stir up the tofu so it doesn’t over cook.  Once the tofu is almost done, sprinkle the garlic powder over the tofu and mix it in.  Add veggies and onions.  Cook until veggies are done.

Place sliced avocado and spincah on Tortilla.  Add tofu mixture and roll it up! You could even add some salsa if youd like to spice it up!

Let me say it was good and I ate it so fast that I didnt even get to take a picture!

A couple hours later I was feeling good and craving some cardio so I headed to our little gym at our complex!

45 Min Elliptical Leg Burner

The workout was pretty simple.  Since the little gym we have isnt equiped with a ton of equitment the elliptical I used didnt have an incline option.  I was a little bummed out but I decided to improvise! I hoped on the machine, set the program to “Random” (which means it changes the incline for me at random times throughout the workout) and began a warm up for 3 min at Level 7. Once I completed the warm up I did 5 min forward then 5 min backward till I reached 40 min. I would turn up the level to about level 11 for a round of forward and backward, then down to about 9 for a round of forward and backward. Once you’ve reached 40 mins, dont forget to cool down and take a nice stretch!  It was pretty simple and really up to you and how much you want to push your body!

Its date night tonight! Cant wait. I always look forward to my nights off with my husband. There is something special about dinner and a movie:)
