A grateful tuesday…food and fitness

Hey friends:) It’s another late night post but its been another full day.  I’ve had a lot on my mind today and I thought I’d share.  (I hope that’s ok)

First things first…Today’s fitness!

I did some bodyrock.tv today before my Yoga practice.  Wow it’s been forever since I’ve done bodyrock! I did the Suicide Sweat workout and boy did I sweat.  I followed it with an at home Yoga Podcast with Nikki Wong. It was just what I needed today.  My body felt good to have a little Interval cardio followed by some Power Yoga with stretching and meditation.

I forget how important taking quiet time to mediate is.  Easily getting caught up in the days busy tasks, I forget to take a second for my soul and be thankful for the day.  I used to make a goal to put my feet down out of bed in the morning, one at a time, and with each step say “thank you”. My goal has been slipping lately due to rolling out of bed to get Carson to work on time and I’ve noticed a difference in my day.  After my yoga practice today, I reflected on my tuesday and realized a have a lot to be grateful for.  Number one, I had the most delicious breakfast this morning (sadly there is no pic because I inhaled it)

Protein Oats

1/2 cup GF oats
1 scoop sunwarrior vanilla powder
Cinnamon
Stevia
Frozen Blueberries

Number two…I picked up some blank canvas, paint, and stensils to get crafty for our apartment:) I’m so nervous to mess it up! I’ll post some pics when I get the courage to finish them:)

Number three…Carson is the most patient husband ever.  I’ve been a little sasssy due to feeling under the weather, and he has patiently hung frames, de junked the dresser, and re hung the same frames all day. (this will be sappy…feel free to skip if you don’t want to read it:) I’m probably the most grateful for Carson all day.  He works hard, comes home and continues to work hard to put our place together never complaining about his long day.  I could learn from that…

Number four…I’m grateful for the time off from the show to be at home, cook, and have the evenings with Carson.  Although I’m anxious to get on stage next week, it has been a nice break from all the craziness. It’s given me a chance to get in the kitchen and really take care of myself.

Number five…I’m grateful for my body and the strength it holds.  I feel blessed to work out, run errands, practice yoga and sleep.  I feel blessed to have food (sounds so weird) but really…I really enjoy cooking and feeding my body all the good stuff it needs:) I get excited when I find new recipes online that fit my diet! My soul is always happy when I treat my body well.

Number six…These made my day today…I posted about these here...

Vegan Oat Tahini Cookies

1 cup GF steal cut oats (bobs mill)
1 cup brown rice flour flour
1/4 teaspoon sea salt
1 teaspoon baking powder
1/4 cup tahini
1/4-1/2 cup coconut oil
1 teaspoon vanilla extract
2 teaspoons cornstarch
1/2 cup agave syrup

Method

Preheat oven to 350°F. Grind oats in a blender until coarsely ground (some whole flakes should remain intact). Do not wash out blender.

In a large mixing bowl, combine oats, flour, salt and baking powder.

Place tahini, coconut oil, vanilla, cornstarch and agave syrup in blender and process until smooth. Stir this mixture into oat mixture.

Drop tablespoons of batter on a greased baking sheet. Bake for 10 to 12 minutes, until cookies are golden brown on bottom and puffed.

Overall, it turned out to be a great Tuesday.

    tahini cookies yes please!!! those look great! and I am grateful for my loving and caring family!!
