Breakfast Obsession

Hey friends!

Is it called an obsession if I go to bed excited for breakfast the next morning? I dream of vegan protein pancakes and delicious oatmeal in my sleep! I guess it’s not a bad thing right?

I want to share my favorite breakfast recipes with you for my “what I ate wednesday” post! Check out all the WIAW goodness over at Peas and Crayons and join the fun!

Vegan GF Protein Pancakes

This is the BEST after a workout! The protein and carbs go right where my body needs them after a good sweat sesh! They take about 10 min and they are naturally sweet with the banana, stevia and cinnamon! Or if you are a waffle person, give the Vegan GF Austrian Waffles a try!

No Bake Quick Oatmeal Breakfast

This one is one of my go to recipes! It’s fast, easy, filling, and tasty (which is the most important part right?!) I make this gluten free and vegan with Almond milk instead of dairy milk, and GF oats.  Feel free to top with anything! I may be biased but I think peaches are my favorite to top this breakfast with.

Coconut Almond Protein Oats

This was a new creation this morning! (terrible picture but it tasted so delicious!)

  • 1/2 c GF Oats
  • 1 c water
  • 1 spoonful of almond butter
  • 1/2 tbl coconut oil
  • 1 scoop sunwarrior vanilla protein
  • 1 tbl ground flax
  • dash of cinnamon and stevia
  • 1 banana
  • almond milk (if it needs a little more moisture)

Cook oats and water on stove top for about 10 min and stir occasionally (or in the microwave for about a minute).  Add coconut oil and almond butter and stir till it all melts together. add flax, protein powder, cinnamon, and stevia.  Top with banana, or any other fresh fruit, and enjoy!

I love this dish when I wanna break from my oats! I love a good veggie omelet with some Daiya vegan cheese!

Morning Mint Mango Madness

Green smoothies are an awesome way to start your day! Easy way to get in some good veggies and fruits bright and early.  I love to mix it up and throw whatever in the blender and see how it goes:) You can never go wrong with veggies and fruit!

Vegan Tahini Oat cookies

That picture is making me crave those right now! I don’t feel one bit guilty eating these because they are filled with all good, whole ingredients! Cookies make me happy, and especially when they are guilt free so why not have them for breakfast?!

We all know that breakfast is the most important meal of the day and why not make it the tastiest?! I know that there are so many awesome breakfast recipes out there so share! I’d love to try something new tomorrow:)

Off to make a batch of those cookies! mmm mmm good!

    I’ve actually gone to bed thinking about breakfast the past couple nights. Nothing like visions of oats to put you right to sleep 🙂
    All those look really fab, I’ll have to try overnight oats, I still haven’t!
    and sweet all the way!

    I have dreams about eating “cheat” foods. Sunday is my “cheat day” and I have had 2 dreams lately that I have cheated on a day other than Sunday and I wake up so glad I didn’t! I think I am a little obsessed! Haha! All of your food looks delish Jessie! I need to try some of your recipes! 🙂 Thank you for sharing them!

      If i give myself a cheat day its over haha ill cheat the whole day and then the next! im proud of you for doing so awesome on your other days! i wish i had the self control haha:)

        I do cheat all day on Sunday. It is so fun, but I feel sick by the end of the night and then I’m ready to get back to the grind on Monday 🙂

    favorite go to breakfast is some form of chia pudding! I enjoy both sweet and savory for breakfast 🙂
