Benefits of using Stevia rather than refined sugars are numerous and here are just a few:

So far I’ve given the Love Muffins a try and added my own little twist!
Gluten Free Apple Cinnamon Love Muffins
1 3/4 C brown rice flour
2 tsp baking powder
4 packets NuNaturals NuStevia white stevia powder
1 egg white
1/2 tsp salt
1 tsp cinnamon
4 tsp unsweetened applesauce
1 c almond milk (or any other non dairy milk)
2 cups of grated apple (around 1-1/2 apples)
Method (makes about 10 muffins)
Preheat oven to 380 degrees. Spray muffin cups with non stick spray and place in muffin tin. Combine all the dry ingredients. Combine all the wet ingredients and add to the dry. Be careful not to over mix:) Scoop muffin batter in to cups and cook 8-10 min, or until puffed up. Take out of oven when they are still a little gooey because they will continue to cook while cooling.
They turned out great! I love muffins and especially when they are guilt free:)
Peanut Butter Carob Cookies (originally from Katie @ makingfoodandotherstuff)
2 Tbl all natural peanut butter
1/4 C brown rice flour
1/8-1/4 C NuNaturals NuStevia Baking Blend
1 Tbl Carob powder ( or cocoa)
1/8 tsp salt
1/8 tsp baking powder
1 egg white
Method: (makes about 6 cookies)
Place all ingredients in a medium size bowl and mix. Scoop small balls onto greased cookie sheet. Bake at 350 degrees for 10-12 min.
Mmmm these were very tasty! The consistency of the peanut butter and the taste of carob was perfection!
