Yep… That’s right. Sexy little salad to help with the swim suit season that is fast approaching:) I can’t get enough of this salad lately and today I want to share it with you! I work all day so I pack a different variation of this for my lunches:) Get ready because it’s super easy!
Isn’t that just the best picture you have seen? Real high quality:) It’s called rushing to work and snapping a pick with my iphone but it goes to show that this salad packs well! I even have a delicious salad dressing recipe for you too!
Sexy Summer Salad
Handful of Organic Spring Green Mix
Cucumber, sliced & peeled
4 Strawberries, sliced
1 medium Carrot (not the baby carrots, the real good stuff) thinly sliced with my veggie slicer
Cabbage, thinly sliced
1/2 Avocado, cubed
1/4 Apple, cubed
Handful of raw Pumpkin Seeds
Dash of Himalayan salt, garlic/onion powder (gives it a little flavor!)
Throw it in a bowl and toss it so all the good stuff doesn’t sink to the bottom!
3 parts salad oil of choice
1 part white balsamic vinegar
Finely grated fresh ginger root (to taste)
(I sometimes place a clove crushed garlic in a small tea ball and let it sit in the dressing for a day or two.)
Throw it all together and there ya have it! Adjust any ingredients to your taste buds or use what you have in the fridge:) It’s easy, super healthy, and tasty! For those of us who are stuck eating salads for the rest of our lives switch it up and make it exciting! A salad doesn’t have to only be lettuce, tomatoes, and ranch! yuck! I could eat this salad everyday and in fact I have for the last week:) Call me crazy but I love a good salad:)
